- 1 packet bacon
- 1tsp crushed garlic
- 1 onion finely chopped
- 250g Mrs. Balls chutney
- Olive Oil
- ½ packet pasta
- 60g butter
- 50g flour
- 500ml milk
- 1 cup grated cheese
Salt, pepper, paprika, thyme
In a microwave dish with a lid, place the pasta, add enough water to cover it, a little salt and a dash of olive oil and cook on high till pasta cooked through and soft.
In a pan, fry the onion and garlic in a little olive oil, add the bacon and fry till it is cooked and soft. Add the chutney and continue to simmer on a low heat till the chutney is a little more liquid.
Once cooked place the pasta in a Pyrex dish, pour the bacon mix over the pasta and toss so that it is evenly mixed.
Back on the stove place the butter in the pan and wait for it to melt, once melted and starting to bubble, add the flour and mix into a roux. Leave for a few seconds, turn it over and then reduce the heat. Add the milk slowly, and keep stirring so that you don’t get lumps. Once smooth, add the spices and a little cheese, taste and add a little more if needed. Once the white sauce is smooth and a medium thickness, pour over the pasta.
Sprinkle the cheese over the top and place under the grill till it bubbles and browns slightly on top.
